Mom’s Banana Bread
I found this Banana Bread recipe in a pile of pages from one of my Mom’s recipe books. My Mom had a drawer full of cookbooks and recipes. I remember as a kid this particular book, she must have used it quite often because it surely is showing the wear. Sadly I don’t have many of her books, but ones I do are very precious to me, as my Mom has been gone from us since September 10, 2001.
As you can see on the recipe my mom’s comment, “this makes a good cake,” if you were to make it into a cake you would probably have to use a 8 X 8 square pan.
I started by mashing my bananas, I used 3 medium sized, I placed them peeled on a sheet of wax paper and then mashed them down with a fork, mashing them on wax paper makes for less of a mess and then you can just dump them right into the mixture when needed. Then I sifted my flour, baking soda and salt in my Mom’s old sifter.
Beating in the Shortening and sugar until well blended, adding eggs and mixing well, then adding mashed bananas.
Adding dry ingredients alternately with the buttermilk. I use a dry buttermilk mix, it works out well and really convenient to have on hand when you need buttermilk for a recipe.
Stir in the nuts, usually I will use walnuts but this time I used pecans, I thought it would be a nice change.
Now all ready for the pan and being I was using my Mom’s Banana Bread recipe I thought it was very appropriate to also use one of her old bread pans.
So after baking the bread for 60 minutes at 350 degrees, we have a fresh loaf of Mom’s Banana Bread!! Nothing like a nice slice of warm banana bread and a spread of butter.
- 2 Cups sifted All-purpose Flour
- 1 tsp. Baking Soda
- 1 tsp. Salt
- 1/2 Cup Shortening
- 1 Cup Sugar
- 2 Eggs
- 1 Cup Mashed Bananas
- 1/2 Cup Buttermilk or Sour Milk
- 3/4 Cup Chopped Nuts, if desired
- Sift dry ingredients together, set aside. Cream shortening and sugar together thoroughly. Add eggs; beat well. Stir in banana; mix well. Add the dry ingredients alternately with the buttermilk, beginning with dry ingredients. Mix well after each addition.
- Stir in the nuts.
- Turn into well greased 9 X 5 X 3-inch pan. Bake at 350 degrees.
