If you are needing a real treat for a dessert try making the “Yummy Chocolate Scotcheroos.”

This is a family favorite, I normally only make them as one of my Christmas Treats, but I made a batch today for our church dinner tomorrow.  I had Rice Krispies that I needed to use up. 

 

I use to work at a Head Start Center and there was a lady my age that I worked with, and every time we had a gathering involving food she would bring Scotcheroos, it was her signature food and never fail the Yummy Chocolate Scotcheroos were a hit.

Yummy Chocolate Scotcheroos are easy and quick to make and I hope your family and friends enjoy them as much as my family does. 

Place sugar and corn syrup in sauce pan and heat until the mixture starts to bubble, add peanut butter and stir until dissolved.

The recipe says add the Rice Krispies to the sugar, corn syrup & peanut butter, but I measure the Rice Krispies into a bowl and then pour the liquid mixture over the cereal and mix it in the bowl.  Pour the previous mixture into a buttered 9 X 13 pan, I want a thinner bar so I butter a foil 11 X 16 pan. Little Tip:  I press in the pan with damp hands, that way the mixture does not stick to your hands.

Now it is time to melt your chocolate and butterscotch chips, make sure to do this in a double boiler, I made the mistake once of trying to melt the chips in a pan and it just didn’t work well at all.  Once the chips are melted spread over the top of your Rice Krispies bars.

Cool until firm and then they are ready to cut and you are ready to enjoy one Yummy Chocolate Scotcheroo!

Ingredients
  1. 1 Cup Sugar
  2. 1 Cup Corn Syrup
  3. 1 Cup Peanut Butter
  4. 6 Cups Rice Krispies
Topping
  1. 1 - 6oz package (1 Cup) Semi-sweet Chocolate Chips
  2. 1 - 6oz package (1 Cup) Butterscotch Chips
Instructions
  1. Combine sugar and corn syrup in a 3 qrt. sauce pan. cook over moderate heat stirring frequently until mixture begins to bubble. Remove from heat. Stir in peanut butter; mix well. Add Rice Krispies, stir until well coated. Press mixture into buttered 13 X 9 X 2 inch pan.
  2. Melt chocolate and butterscotch morsels in top section of double boiler over hot but not boiling water. Note: you can melt chips in a saucepan over very low heat, stirring constantly until well mixed. I strongly suggest using a double boiler. Remove from heat, spread evenly over Rice Krispies mixture. Cool until firm, Cut into bars 2 X 1". Makes 54 bars.

I have been really busy, crafting, scrapbooking, decorating and wrapping gifts. I have been especially busy this week with the Christmas Baking Goodies, I make a lot of different cookies and bars.

I had plans to decorate my sugar cookies really beautiful this year, but I have to tell you, I sure give credit to those that take the time and have the patience to decorate their cookies so expertly. I tried but could only manage to do a few, the picture above is a sample of the few I did take time to do.

I do want to share one of my favorite Christmas Baking Goodies that I only make at Christmas time. This is a recipe I received from my neighbor’s sister-in-law about 30 years ago, I know if you make it you will really enjoy it.

As you can see this recipe has been repeatedly used and enjoyed.

The ingredients are a boxed German Chocolate Cake Mix mixed with 1/3 cup of evaporated milk, 3/4 Cup melted butter and 1/2 Cup Chopped Nuts, this mixture should be thick.

Put 1/2 cake mixture on bottom of greased 9 X 13 cake pan.  Bake that for 6 minutes.  Remove from oven and sprinkle 12 oz of chocolate chips on top and spread caramel mixture over chips and crumble or spoon remaining cake mixture over the top of other mixture and bake for 15 minutes at 350 degrees.

Ingredients
  1. 12-14 oz Kraft Caramels
  2. 1/3 Cup Evaporated Milk
  3. 1 Box German Chocolate Cake Mix
  4. 1/3 Cup Evaporated Milk
  5. 3/4 Cup Melted Butter
  6. 1/2 Cup Chopped Nuts
Melt over low heat: Caramels & 1/3 Cup Evaporated Milk
  1. Mix Together while caramels are melting: German Chocolate Cake Mix, 1/3 Cup Evaporated Milk,
  2. 3/4 Cup Melted Butter & 1/2 Cup Chopped Nuts (optional).
  3. Note: Mixture should be thick.
  4. Put 1/2 of cake mixture on bottom of greased 9 X 13 pan. Bake at 350 degrees for 6 minutes. Remove from oven and sprinkle 1-12oz bag of chocolate chips over mixture, then spread caramel mixture over chips and crumble or spoon on remaining 1/2 of cake mixture. Ever since I can remember I have enjoyed homemade pies for Thanksgiving, there is Nothing Like Homemade Pie!!!

For some reason I remember one particular Thanksgiving, I was a young girl and it was November 24th, my third brother’s birthday. I don’t recall how old he was but it seemed like it was a big deal because it was a special day!!  

I recall my Mom baking and getting the turkey ready, she always made such great meals, it didn’t matter if it was for a special holiday or just a normal supper meal. We always had meat, potatoes, vegetable, salad and of course a dessert. One of the salads she made that I really liked the most was just a simple half peach on a leaf of lettuce and a scoop of cottage cheese in the middle of the peach!  

 

This morning I woke up at 5:30 am and I knew I had 3 pies to make today so I figured it was a good time to get up and get those pies done.  I had a dilemma, pie crust, the last couple of times I had made pie crust it just fell apart when I went to put it in the pie plate, I just really couldn’t figure out why, I have always made wonderful pie crust and now I just couldn’t get my old faithful crust to turn out. So I started searching online for pie crust recipes and decided to try a couple of new ones.

I always made my pie crust from a certain brand of shortening but as of late, like I said the pie crust just fell apart, so the first crust I made was from butter & cream cheese, which you had to refrigerate for at least 30 minutes.  The next crust I made did use shortening, which I did use that brand, but it had a couple of other ingredients that I hadn’t used before.  The butter & cream cheese crust rolled out fine and didn’t fall apart but the next crust just crumbled, I had to do a lot of patching to make it work, hopefully it taste alright. 

I made my own pumpkin pie filling from a pumpkin I grew in my garden, so for sure nothing like homemade pie.

I also made 2 Apple Pies, no I don’t have my own apple orchard, wish I did!!  But remember how I introduced the Apple, Peeler, Corer?  Well, it worked great here for peeling and coring those 18 cups of apples I needed for the 2 pies, click on the link below and pick yourself up a Apple, Peeler, Corer!!

So instead of giving advice this time, I am asking what is the problem, is the brand of shortening I have used for 47+ years just not up to standard or could it be the water softener salt in my water???

I found a recipe for Carrot Cake in a church recipe book, but I wanted cupcakes.  I decided to revise it and add some of my own ingredients, we now have Honey Carrot Cupcakes made with carrots from my garden.  The honey I used in my Honey Carrot Cupcakes actually came from a friend that raises bees down in the Northern part of Missouri.

I started by washing and hand grating my carrots, now I am wondering if a person can freeze grated carrots for future recipes, a good topic to check into.  Then it is on to adding the dry ingredients, flour, sugar, baking soda, cinnamon and salt, mix dry ingredients and then make a well into those ingredients for the next set of ingredients.

Then add your oil, eggs and vanilla and mix well. This is when I added my tablespoon of honey. Stir in carrots and you are now ready for the prepared cupcake pans.  I did add chopped up pecans and some raisins, just for something extra.

The smell of these Honey Carrot Cupcakes baking is just so very delightful, gives this warm November in Northern Wisconsin more of a fall feel.  My friends down in the southern warm states it has been in the 60’s here all week, doesn’t even seem like winter is fast approaching.  Even the plants are a little confused, yesterday I notice my Hollyhocks are starting to grow again and I noticed along another house in town that their pumpkin plants are growing.

Okay back to the recipe at hand.  I topped my cupcakes with a nice swirl of Cream Cheese Frosting!  I am taking this cupcakes to my church Ladies Mission Circle Meeting that we have tonight, I am confident they will truly enjoy them.  And let me tell you these cupcakes turned out so moist and were absolutely delicious, the ladies loved them.

Ingredients
  1. 1 Cup Sugar
  2. 1 Cup Flour
  3. 1 teaspoon Baking Soda
  4. 1/2 teaspoon Salt
  5. 1/2 teaspoon Cinnamon
  6. 3/4 Cup Vegetable Oil
  7. 1 Tablespoon Honey
  8. 1 1/2 Cups Carrots (shredded)
  9. 2 Eggs
  10. Optional: 1/4 Cup Pecans (chopped), 1/4 Cup Raisins

  1. 3/4 Cup Butter (softened)
  2. 1 1/2 Cup Powder Sugar
  3. 6 oz. Cream Cheese (softened)
  4. 1 teaspoon Vanilla
Instructions
  1. Preheat oven to 350 degrees, line muffin pan with cupcake liners. In a large bowl combine sugar, flour, salt, baking soda, cinnamon. Make a well in the dry ingredients and add oil, eggs, vanilla & honey, mix up well. Stir in carrots and optional pecans & raisins. Fill cupcake liners 3/4 full with batter mixture. Bake at 350 degrees for 16 minutes, check by poking toothpick in center of cupcake until it comes out clean. While the cupcakes are cooling you can mix up your frosting. Put all the ingredients together and beat until smooth.

It is a rainy cool day here in Northern Wisconsin and I thought turning the oven on and baking something that would give a delightful aroma throughout the house was a great idea, so today I am going to share my Favorite Apple Crisp recipe with you. I actually got this recipe from my friend Betty and I just love it!!

It is apple picking time and there are so many great recipes to use all those yummy apples for.  I know my husband really likes when I make him an apple pie or apple crisp and with it being that time of year apples are on sale!  I got out my Apple Peeler/Corer, it makes the job so much easier and faster, if you have a lot of recipes that require peeled apples and you don’t have one of these great tools I would suggest you get one, it is magnificent.  I bought mine at Menards when they had a sale on them I don’t think I paid more then $5.00 for it.  Here is how it works!

  1. Stick your apple on the 3 pronged gripper fork.
  2. Turn the crank hand to peel, core & slice.
  3. Pull your completely peeled, sliced & cored apple off the prong.

And there you have all your apples ready for your baking recipe, here I laid my sliced apples in a buttered baking dish.  Normally you would use a square 8 X 8 pan for 6 apples as the recipe calls for, but I used 8 apples and a 10 X 7.5″ pan.

Next steps is to add your butter, sugar & flour into a bowl and cut it with a pastry cutter until it is blended fine like cornmeal.

Cover sliced apples with butter, sugar & flour mixture and sprinkle on cinnamon.  Place in heated 350 degree oven for 30 minutes.  Smell the aroma from this Favorite Apple Crisp baking?  I know you will enjoy every last bite!  Want a real treat top it with a scoop of ice cream!

This Chocolate Coke Cake has been one of my favorites, but I haven’t made it for quite some time, but obviously I have made it since my older grandchildren have been around because my oldest grandson who is taking a cooking class at school requested the recipe so I decided it would be a good time to make this delicious Chocolate Coke Cake.

I received this recipe many years ago when a group of us ladies worked together at a ski resort, that would have been back in 1972-73, we shared many recipes during that time, I will be sharing some of them at a later time, so I hope you enjoy the recipe for Chocolate Coke Cake.

  1.  Place the flour, sugar, cocoa and baking soda together and mix up well.

 2. In a separate bowl mix up the margarine, shortening, coke, buttermilk, vanilla and eggs.  I didn’t have the liquid buttermilk, but I had a dried buttermilk that you mix with water it worked fine.

3.  Then mix the wet ingredients with the dry mix, then add the marshmallows and mix them in.

4. Prepare the a 9 X 13 pan by greasing the pan with shortening and then coating it with flour, evenly distribute the flour around in the pan.

5. Placed the chocolate coke cake mix into the prepared pan and place in the oven set at 300 degrees and bake for 1 hour.

6. While cake is baking it is time to mix up the frosting, put the butter, cocoa & coke in a pan on the top of the stove and coke until boiling.  Let that cool.  After cooled then add the powdered sugar, vanilla and nuts.

7. Once the cake is done and has cooled for 10 to 15 minutes you can poor the frosting over the cake.

I’m back!!!  I haven’t posted anything in the last few days, I have been busy finishing up my canning and fall decorating, which I will post pictures of as soon as it stops raining, doesn’t look like it will be too soon.  Today I am going to share a few recipes from an old cookbook of my Mom’s, her recipes are very dear to me as she passed away on September 10, 2011, she battled that horrible disease of Stage II Diabetes for a number of years, ended up being on dialysis for 7 years, not a fun time at all.  I hope you find this White Christmas Cookie recipe as delicious as I always have.

My Mom and her only brother.   My Mom made so many delicious meals and desserts for our family I want to share some of those recipes.  This recipe is one of the cookies she made at Christmas, but for any of you that read my Tribute To My Country Boy, I made these cookies for him for Christmas and I know that he shared them with the other guys in his squad.  This recipe is quite old, my Mom had this recipe book for all the time I can remember & I am now in my mid-60s.

WHITE CHRISTMAS COOKIES

Ingredients
  1. 1 Cup Shortening
  2. 5 Cups Flour
  3. 1 tsp. Soda
  4. 1 tsp. Baking Powder
  5. 1/4 tsp. Salt
  6. 2 Cups Sugar
  7. 1/2 Cup Sweet Milk (is is actually whole milk)
  8. 2 Eggs
  9. 2 tsp Vanilla
Instructions
  1. Mix together as pie crust the flour, salt, soda, baking powder and shortening (with pastry cutter).
  2. Add sugar, eggs, milk and vanilla.
  3. Mix well with flour mixture.
  4. Roll out 1/3 batch at one time.
  5. Use fancy cookie cutters and sprinkle with colored sugar. Place on cookie sheets and bake.
  6. The recipe doesn't include an oven temperature but I always set it at 350 degrees and watch them carefully, you want them just light brown on the bottom, this is so you have a nice soft cookie, of course if you want them crunchy bake longer.
  7. I actually half this recipe because it make so many, 4 dozen is an approximate amount.
  8. I also frost my cookies with different colored frosting & then decorate as your prefer.
  9. Make sure to flour the area where you are rolling out your dough or it will stick to your work area.
